I made some cookies last night. I packaged up some for the neighborhood kids and took some to work. They were a bigger hit than I thought.
I wanted to put them here in case anyone else wanted to get in the Christmas spirit and make some cookies (and also so I won't lose them and I know where to go back and get the recipe)
Ginger Crinkles (I got this one off a blog I like)
Aunt Frances’s ginger crinkles
Ingredients:
1 cup sugar
1/2 cup oil
1 egg
1/4 cup molasses
2 cups flour
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp ginger
1/4 cup sugar for dipping
Method:
Preheat the oven to 350 degrees.
Cream the oil, sugar, egg and molasses. Mix together the flour, soda, salt, cinnamon and ginger and add to the liquid ingredients.
Roll dough into walnut size balls (about 1/2 a tablespoon) and dip into sugar. (if you have kids, they love rolling them in the sugar)
Bake at 350 until slightly brown for about 15 min.
Note from Aunt Frances: Do not overcook!
Note from Blog author: I was out of regular sugar so I used turbinado sugar, which was very tasty. (Note from Teri…I used turbinado sugar too…they were pretty tasty)

Aunt Hazel’s Cheese Cookies
Aunt Hazel is Chris' Great Aunt, so this makes this recipe even more fun for me. Chris said his Mom and Gammy would also make cheese cookies. Our guess is that all their recipes are the same.
2 sticks butter (Hazel’s recipe says Oleo which is margarine, but I used butter)
2 cups flour
1 lb extra sharp cheddar cheese
½ tsp cayenne pepper
2-3 Dashes of Tabasco
4 cups Corn Flakes
Preheat oven to 325
Grate Cheese
Combine all other ingredients, then add cheese.
Roll into balls and smash with fork like peanut butter cookies
Bake at 325 for 25-30 mins.
Note from Aunt Hazel - Makes as many cookies you have the patience for…ie lots of little cookies or not so many bigger cookies, either way they are pretty yummy
Suggestion - cheese cookies are great to dip with soups.
I used my Kitchen Aide mixer for both recipes and they were super easy to make.
You can also make the cookies the night before, wrap the dough in plastic wrap, store in the fridge and bake the next day.
