Crockpotting ; )

I received a fancy new crock-pot from my in-laws this year for Christmas. I thought new years day was the perfect time to initiate it's use. Chris, the boys and I went to Randall's last night to get a few groceries. I thought I would have to buy dried black eyed peas, because cans would be sold out...well dried ones were sold out too. Luckily they had fresh (or pre-soaked) in the produce aisle. It cames with crock-pot instructions too.! Success!







I bought 2 packs along with some cabbage, carrots, mushrooms and onions for another dish. I think these are the most hated vegetable by a certain Mr. Chris. But I love them and rarely eat them fresh, so I made a yummy veggies stir-fry medley.








Here is the finished product for the black-eyed peas. They took longer to cook than I thought but they tasted great. Since I made such a large batch for the crock-pot I get lots of leftovers....all for me. Chris just eats the customary spoonful for good luck on New Year's day.
